Guadalajara is an unexpected destination for an avant garde restaurant, but this is one of the coolest restaurant spaces I’ve ever seen. Celebrity chef, Alfonso Cadena, teamed up with his brother, designer Ignacio Cadena, to create an art installation meets restaurant. With over 10,000 cast aluminum animal bones mounted on timber blocks, the effect is like a second skin covering the walls. The concept of Hueso (Spanish for ‘bone’) was inspired by Darwinism according to Chef Cadena. The neutral palette paired with lofty ceilings feels organic yet comfortable with its clean-cut canteen style tables for communal dining. The exterior is entirely covered by ceramic white tiles with an Aztec design also reflective in the earthenware dishes. The entire concept is incredibly unique and even cooler that it was conceived by two brothers.
